About Truffles

What is a truffle?

Truffles are the fruiting bodies of fungi that grow underground in partnership with the roots of suitable trees, including hazel and oak. Their distinctive aroma and short seasons make them one of the most prized culinary ingredients.

Black summer truffles

Black summer truffles (Tuber aestivum) are generally harvested during the warmer months. At Goosefayre, the practical season is usually June to October, but the precise timing and quantity depend on soil and weather conditions.

We hunt for truffles in our hazelnut plantation with trained dogs. Fresh availability can change quickly, so please contact us for the latest harvest information.

Seasonality and origin

Truffle seasons differ between species and regions. Production in both hemispheres can extend seasonal supply, but the origin, species and harvest date should always be checked when buying fresh truffles.

Buying and using truffles

Fresh truffles are best used promptly. Their aroma works particularly well with simple foods such as eggs, pasta, risotto and butter. We also offer preserved truffle products when fresh truffles are out of season.
